Also for what it’s worth the A32NX (experimental) indeed does not have the same issue, but that wasn’t much of a surprise. Regardless of FCU altitude it climbs with positive V/S and descends with negative, unlike the stock A320. It never crosses the FCU limit, of course.
(And as expected it immediately updates, without requiring you to pull the V/S knob again.)
