was doing a return flight , with new flightplan and while just at crz alt i switched to outside view to make a nice picture. when don i switched back to inside view and found cockpit stripped of all switches.

Yeapp… this is nothing new… It usually snaps back when you get closer to the airport. Or if you cycle between cockpit and external view rapidly for a while.
I have this issue too. Testing in 747, I managed to work around this. Go to General settings - Camera and under Cockpit Camera you will see Home Cockpit Mode. Set this to On. Then Apply and Save, Resume the game. Once back in, go back and set the setting to Off, Apply and Save, resume. Now I can use the cockpit buttons / controls.
I think this is related to a memory leak issue (don’t quote me on it), causing the cockpit not to render when switching to cockpit view. The setting above disables cockpit rendering. I have a feeling that setting it removes the data from memory and then unsetting allows it to regenerate.

PS. Turns out I may be wrong. This only fixed it twice, then problem started occurring again.
So we can conclude that there is a intermittend bug making the buttons disapear.
Now we need 20.000 votes to get attention about this 'happens sometimes bug.

I have managed to stop it I think. Had two flights now without incident. Try turning your graphics settings down a bit, perhaps let NVidia Geforce Experience choose the settings. After doing this, the issue seems to have disappeared.
Perhaps too much RAM or VRAM is being used and the game doesn’t know how to deal with it. Haven’t tested yet.
You can’t really fix this consistently. I’ve been flying over 800 hours in the sim, and I only had this cockpit issue 3x. Up to a total of probably 10-15 minutes. It’s very difficult to replicate consistently. If it happens it happens, when most of the time it never happens again, until it does.
3rd time that after switching between inside and outside view all screens inside the a320 disappear and it’s imposible to get them back. This is annoying after a 2 hours flight. I play on Xbox series s. I tried to save the flight plan and reload, but every time y try to reload the flight the game crashes.
