the A320neo is described with a speed of 455 kn but in the simulation there comes an
overspeed warning at 360 kn.

That is true, but bear in mind that there are several speed types.
There are four different types of airspeed, Indicated Airspeed (IAS), Calibrated Airspeed (CAS), True Airspeed (TAS), and Equivalent Airspeed (EAS), and then throw in ground speed.
The speed you have mentioned is TAS.
In IAS (which is the speed seen in the aircraft gauges) at 36000 feet, .82 mach (which is the maximum speed) translates to 273 knots.
