Just had my first major bug…everything is working fine then I go to load an approach. Avionics and everything freezes, plane still flies, but nothing and I mean nothing works. Anyone else had this issue?

No.That’s clearly a bug.

There’s an important difference between ALT and selected ALT.
If the aircraft is in ALT, there can’t be any other mode active. Can’t remember exactly since it’s too many years ago that I’ve flown the CRJ. Maybe you can push the speed button, but since the CRJ doesn’t have autothrottles, nothing will happen.
If you have selected an altitude and you are not within the altitude capture range, you can use speed, v/s or pitch until capturing.

Another thought to your initial question. You are at FL360. How heavy are you? Who assigned your cruise at 360? Please say SimBrief or something along those lines and not the MSFS Flight Planner or ATC. Cause if you are too heavy, FL360 may be a little challenging to get up to and stay there. Just another thought.
Yes, simbrief. I had about 3600 kilos of fuel. Takes a while to go up there, but it is not super-hard. It was also not difficult to recover from the low speed high AoA situation. The problems always started once I tried to reengage the autopilot. No matter what settings I used (speed mode, low VS) it seemed to immediately want to recapture the lost altitude using an extremely high angle of attack and VS +10 mode…
The Aerosoft CRJ did take some getting used to but once I got the flow is memorized it seems pretty easy to fly. I have been keeping the throttle on the high side in cruise to make things smoother. I don’t have to pay constant attention. I also tried out the VNAV cheat and it seems to work really well.

I also had this exact same problem. To me it seems like an Asobo bug as I have seen similar things happen in other default aircraft. Had issues particularly with the TBM when trying to reengage the autopilot and get violent nose up and high VS. Only thing I can say is to not allow the autopilot get disengage automatically. Never had any issues unless I have let the speed drop as you did.
VNAV cheat?
If you enable the "coupled VNAV’ in the settings, you can use the VNAV button to follow the VNAV path instead of you having to do it manually.
You still need to manage speed but it’s less workload
ohh awesome I missed that option when I was setting up for the first time. So would you wait to click the VNAV button when your passing your TOD then? I went and enabled it while in cruise and it wanted to start descending immediately. I still have a lot to learn (and unlearn) since I had mostly flown ZIBO 737 and this CRJ is obviously different in many ways.
You click it right before descent. Set your lower altitude. Plane does the rest. Just watch your speed and adjust throttle.

I entered my flight manually into the FMS, including FL.
Once I hit ~ FL250, my airspeed drops to about ~150knots max and will not hold altitude or gain altitude, even when I set the VS to 500 f/m
What is your throttle set at? What airspeed did you climb at? How did you climb, manually, V/S mode or Speed mode? What do the indicators at the top of the PFD say?

Did you do the tutorial flight? I really recommend the tutorial flight, it will clear up many issues.
