I’m not a developer, but it seems like what you’re asking requires significant programming resources. It’s not like doing a paint job.
There are plenty of Steam Gauge aircraft out there to choose from. The Bonanza G36 with its glass cockpit is my go-to GA aircraft, and I’m looking at purchasing the Bellanca Super Viking myself. As someone else stated, I could buy the BlackSquare Analog Bonanza G36.
It seems that what you want is essentially payware development for free.
