Is it actually possible to find animals and see crops in free flight? I’ve been looking all over, have not been able to actually see any crops like corn etc, and have only been able to see animals in the world photographer mode. Would be great to just stumble on the animals in free flight, rather than having to do a specific activity…

Animals are definitely there in free flight, but they do seem rare. I expected cows in fields and pigs on pig farms (very prevalent in my part of the UK). Haven’t seen any of that.
But I’ve seen them twice so far: I found a flock of deer when flying over a forested area in the UK (cool!) and I’ve seen a bunch of what appeared to be buffalo (?!) roaming the taxiways at Amsterdam Schiphol EHAM (not so cool).
But they’re there

Saw some random cows in Austria, that was it.
I’ve spotted cows twice when flying around the UK low and slow in the CGS Hawk ultralight. Both times there were only a couple of them in the fields. Buzzed them and they ran away which was cool. Haven’t seen any sheep, do they exist in the sim? Hope they do as the UK has them everywhere. Was hoping there’d be random birds flying around as well but havent seen any.

Funny, I saw those cows too while approaching EHAM/27 yesterday.
They looked like Scottish Higlanders to me.
Luckely they were in the fields outside the airport an not on the runways.

I’ve seen cows, kangaroos, and wildebeest kind of things.
I haven’t seen any free-flight wildlife in the UK yet, but I did see a cornfield when I changed the month to September. Landed my X Cub nearby and walked through it too! 
…and… did this kanga carry a roo in its pocketses, my precious?
On Oahu i landed in a pineapple field. Though i didnt see prickly bastages until 10 ft off the ground 
Found a herd of cows when flying around Italy.
And a couple of horses in a nearby field
Wandering all over that road.
Yep, have seen kangaroos twice now, both times on the runway on touch down, which is a realistic expectation in some parts of Australia. I must say that I was pretty impressed with how they moved, very realistic. I captured them in a clip, I’ll post it later.
Are you guys satisfied with crops? I’ve been messing a bit with them and I’m not sure it works properly.
In East Europe, on most fields in april and may there is dead grass…
I was expecting to see more green, but I do not.

I saw crops too on the side of an airport in Italy during a career mode mission.
My inner Grammar Cop noticed that you spelled there and they’re correctly. That’s rather refreshing in this day and age. 
Glad to hear there are animals roaming around.
It’s not every field that is populated with crops. When you fly around, you’ll notice some have more detail and a “rutted” look compared to others. Those are the crop-enabled fields which can probably be used for cropdusting missions, but not all fields will have this treatment.
Please provide pictures with spring - summer on those that you think are crops, also some coordinates. I’ve been flying for hours and what I showed are the best examples. Thanks!
