Brief description of the issue:
If you’re zoomed in to one of the instrument quick views (whatever it’s called) and move the cursor around to adjust a knob or something and AP gets disabled and the aircraft immediately banks to the side.

LB+D-Down (x2) so you’re looking at the ND and PFD >> Move cursor to the Altitude knob
