There is an issue where turning on the Assistant Pilot at all then causes it to come on every time you start a flight, this is especially annoying in cold & dark where it will fire up and pushback before you can get it off.
Simple fix is to set it so assist pilot is off by default on every flight until enabled.
As a further update I literally cannot start cold and dark at all now as assistant pilot comes on regardless and starts pushing back and firing up
There are actually a couple of options you want to disable. I’m not running the sim at the moment but think you have AI Checklist, Pilot, and ATC. I keep them all off to avoid the pushback mess you mention. I believe the AI ATC is the one that calls for the pushback.
Ensure in Assistance Options (I’m on a PC, so I’m hoping you have that option) that under Piloting,
AI Radio Communications (ATC) is selected to Off.
Ensure in the on screen toolbar menu, in Flight Assistant, the same setting is turned off.
To futher clarify AI ATC is off, one I press fly now in the sim the AI Pilot engages begins a pushback and start while radioing ATC for clearence.
All of my assistance options are off as standard I never use them, I engaged the AI Pilot to do a flight as I watched and now it comes on against my will at the start of every flight.

There has been a bit of confusion for folks about the assistance options.
Basically, there are two locations for modifying these settings and they, often, do not work in tandem and/or override what you’ve set.
What you want is to go to the Options section and set all the individual settings how you want them there rather than adjusting them from the in-cockpit window.
Have you done this and it still overrides your settings?
I think the op is describing a bug where the AI on setting is retained between flights, regardless of the options settings.
I believe that the way to solve this is to start the flight, and let the AI initially do its thing. Then turn off the AI Copilot and take control. Then make sure you end the flight by returning to the main menu. This should reset the AI copilot setting in the menu bar as the setting is carried over from flight to flight.
It shouldn’t do that.
I have mine off, and I do not return to the main menu.
It is not on when I start.

Are you sure the settings haven’t changed?
Doing the challenges and some others does reset your assistance options.
They are also often changed by an update.
