Is there a way to keep ATC from commanded unrealistic altitudes (other than going VFR)? The poor little Cessna 172 can’t get to FL180. It’s lucky just to get to 12,000.
Not yet. You can generally ignore silly ATC commands and continue. Alternatively, you can acknowledge their request, and simply not follow it.
It’s a known issue with ATC. I’d suggest taking a screenshot of the erroneous ATC request, along with your aircraft details and to/from airport, and create a ticket on zendesk.

Why don’t you change the cruising altitude in the Flight Log before you hit Fly now?
And when ATC gives you an unacceptable High altitude, you can normally request lower (or Higher)
ATC never gives me the filed altitude.
Currently, MSFS ATC is badly broken.
You know it.
I know it.
This Forum knows it
The Internet knows it
And Asobo & Microsoft know it.
It will get better - a lot better, or some are going to look pretty bad.
In the meantime look upon it as a learning experience. (and somewhat of a game !!)

As in Real life – learn how to “Work the System” ..
You will soon get a pretty good idea where ATC falls over, and you can work your way around it.
Think of it as an ATC Challenge !!! have fun with it, and roll with the punches.
When ATC messes up, it is often quite amusing ..
It will get fixed… (or Hopefully completely re-designed with a decent “Smart” AI ATC)

That’s true, but sometimes ATC will refuse to give the lower altitude, and sometimes ATC will just give the higher altitude after giving the lower altitude.
I know .. frustrating .. but you can always resort to what you would do in real life.
The magic words are “Unable to comply” !!! As PIC, this is your call.
While there is not a way in MSFS to formally do this, what I do is request the altitude 3 times, and if I do not get it, I “simulate in my mind” telling ATC that I cannot comply with their Altitude assignment, and just carry on.
Not perfect, but will get you through the flight, without too much frustration ..
However, if you do this in RL, you better have a good reason when you land and questions start getting asked !!!
