I’m not at my computer at the moment, but have you tried using the (Oculus Mirror) app? It may allow you to override and force it to display only one of the eyes, left or right, on screen. I think it may also be able to enable image stabilisation and adjust FOV etc.
Unfortunately, I’m not aware of a way that exists yet to do what you describe (Ive also thought about it myself as it would be great to show family and friends whilst they’re fully immersed in VR and not having to keep looking out the front window).
I wonder if AI MSFS autopilot mode can be trusted enough to land and takeoff, or whether one of the recording apps (e.g. sky dolly) has the capacity to help in this situation?
I think the built in MSFS record app may actually record camera movements so it probably won’t be helpful, unfortunately. It will simply replay what you recorded, which in VR mode, might make someone sick. I haven’t tried it yet though so I can’t say for sure. Sky dolly is more advanced but still no guarantee. It’s on my list of things to try.
