I finally figured out how to do this, stupid really. Under the windows/change aircraft drop down, the menu is collapsed and if you grab the little blue triangle at the bottom right, you can drag it down and viola the whole list of aircraft appears. Select, then click Load. Little things like that evade and annoy me on a regular basis in old age lol. Happy flying!

I don´t like it as in dev mode you can´t see the aircraft icon, which makes hard to select the liveries and the model itself. Imagine when you have a huge collection of aircraft in the future… I hope a regular aircraft selection is available during flight as it is in the main menu.

It would seem to be an easy fix to allow aircraft changes in flight as in previous versions of FS. If it can be done in dev mode, surely it can be done out of it as well.
Time will tell.

Note that loaded planes will revert to default callsigns.
This is true and I noticed that as well.
When I tried this the other week I would go from a cold and dark airplane to one that is fully running, without a parking brake and it would start taxing across the airport.
