Just an update here:
I fixed this issue by uninstalling FS2024, removing my %APPDATA%\Microsoft Flight Simulator 2024 folder (the one that contains the UserCfg.opt) and reinstalling FS2024.
Maybe it was due to some errors in the installation process that was pretty unstable the release day.
