Complete reset of pilot profil and flightlog

Hallo, is there any idea about the complete reset of the pilot profil (hrs) and the flightlog?
I have the DVD version and like to start from the beginning with clear profil and flightlog, because all other flights were more or less for test.

I have already the pc completly new installed, than fs2020 new installed , but at the first start of the fs , the fs has synchronized with informatios out of the cloud. No rest of pilot profil or logbook.
