Brief description of the issue:
Computer completely crashing on MSFS start up. Can’t get past main menu. I have noticed is MSI Afterburner that on startup of MSFS, the GPU memory spikes up to 9501MHz and stays there. Not sure if this is normal but I feel like I didn’t notice that before.

That sounds like a hardware issue. There was a similar post last week and it turn out that the guys PSU wasn’t up to the job.
When MSFS starts, al lot of the components are drawing a lot of power. He replaced his power supply with a higher ratted one and its been fine since.
Obviously I can’t say thats the same in your case, but other things that could cause the whole PC to restart are drivers perhaps. Whatever it is, its unlikely to be MSFS itself, as this shouldn’t affect the whole PC.
I’m the guy who replaced the power supply. It solved everything. I don’t know if the old one was too weak or had started failing but works great now. I had many power off issues at various stages of the program generally when something was loading.
First check cpu and gpu temps, if fine as mentioned it could be PSU drawing too much power, you can try to reduce frame rate in Nvidia control panel set Max Frame rate to 20 in Manage 3D setting Tab, this will drastically reduce GPU power wattage, you can underclock your gpu too to see if this helps.
