I remember copilots being visible in all my aircraft but not recently. It puzzled me so I went looking through the menus but haven’t found anything relevant I might have turned off. weird!
I use the PC version (and had to redownload recently after fixing a major PC fault - got back the full Premium Deluxe version with all that sails with it.

Depends on the Aircraft…
They will show when in outside view looking at the Windshield, but not always internal. Some payware have the option to turn it off and on, but as far as I know, no default Air Craft show a co-pilot internally.
By default, copilots will never appear inside the aircraft. And there’s no in-game option to enable or disable them. Pilots and copilots most likely appear from the outside camera looking in. But it all depends on the aircraft and the developers.
FBW A32NX and Headwind A339X aircraft all have the option to enable or disable pilots inside the cockpit via their EFB FlyPad. Other aircraft developers may/may not include the same option in their respective aircraft.
Or there could also other mods that manually enable/disable pilot models inside the cockpit. Even I made a tutorial once on how to manually add it to your aircraft which requires a bit of manual editing of the aircraft game files a little.

There is no VC file, only *Interior_LOD0#.gltf which has the data
I personally like having an internal copilot avatar and PAX. As noted, they mainly are options for some payware aircraft (e.g., 310R, 414AW, Kodiak) and the DHC-2 Beaver.
