The F-14 is heavier but can still turn with an F-15. The A model is more challenging to fly as it’s more prone to compressor stalls and / or flat spins due to the TF-30 engines, while the B model is able to hold its own against much more modern fighters. It’s just a more “interesting” jet in my opinion, with its carrier capability, more colourful liveries and of course Top Gun movie fame.
As an aircraft, the F-14B is about as capable as the F-15, so you won’t gain anything in terms of performance.
