If I buy the 85€ upgrade to premium deluxe would I still have access to the game when my game pass ends ?

Nope. You’d still have to buy the base game again.

As long as you are subscribed yes you will have the full sim with the Premium Deluxe upgrade. When your subscription runs out you lose access to the sim completely until you re sub or buy the base pack aswell, then you have the full sim again. It’s cheaper just to buy the full sim rather than upgrade.
