Ive used both a second monitor and a Android tablet running Splashtop Wired XDisplay as a second monitor with no difference in FPS when running other applications.
Poping out a display in MSFS creates a significant performance decrease.
If you want the cockpit on multiple monitors you either have to run in windowed mode or use something like Nvidia Surround
