I want to edit my profile to add my own name and photo.
I also want to set left and right monitors to left and right views keeping my center monitor as normal front or mouse controlled viewing.

Welcome!
Click on the icon in the far upper right corner (to the right of the hamburger icon). Click the gear icon, and preferences. You’ll find your account info there.
There is no native multi-monitor support for additional views in MSFS2020. You can, however, drag various panels to additional monitors.

I do not see any “hamburger” like icon, I do see the odd name I was assigned and an icon to the right of that stupid name, but when I click on it, there is no way to make any changes.
It just say’s; Status and Server.
When I click on the bigger title that say’s PROFILE, I see my profile with the stupid name, but I do not see how I can change my name or add my own photo. Again, I do not see anything that looks like a hamburger. The closet to a hamburger is a bell shaped icon on the title bar just to the left of my user name and blank icon image.

Yeah, that’s the forum profile, I want to setup my profile in the MS 2020 simulator.
I have a really stupid name assigned to me in the simulator.

Hi, Not a problem … but can you believe the stupid name the Microsoft Flight Simulator 2020 gave me?
It’s bad enough my 9-year old PC has so much lag from control input to action … but this flight simulator needs a lot of work itself!

You change the picture and gamertag through XBOX. MS allows you to change a gamertag once for free, after that there is a fee.
You can do this with the XBOX app or can log into XBOX online.

The only choices I see are about 50 avatars and nothing allows me to select a photo from my PC.
I DO NOT have an XBox, Just a Windows 10 PC … My online XBOX settings seem different from the page your posted a link to.
The bottom line is that Microsoft should let us build a profile in the game. I don’t want one universal profile for every game I play anyway.
Unfortunately, that is the only option at this time. XBOX disabled the user to upload their own photo during COVID. I do think they will bring it back, but that image you pick from their selection, you can change many times. It’s only the gamertag you can only change once for free.
MSFS is an XBOX game, so that is why the XBOX app is required. XBOX can also refer to a console. But your case, it’s the XBOX Windows 10 PC App. That link I sent, you can log into using that same XBOX account you used when you signed up for MSFS.
