I am located in Europe - GMT+1 and I’m normally flying in the evening - say 19:00. Now, if I would like to fly say in Japan, the local time in Japan would be for example 03:00 in the night.
If I would like to fly at 19:00 my time zone and I would like it to be say 08:00 in Tokyo (and not 03:00), how exactly do I do this? What setting would I have to do? I do not need real weather btw - I’m fine with a preset if that helps.

You can change the time under weather menu, turn off real time, then use the slider to set your preferred time.
OK - so - let’s say I’d like it to be 08:00 in Toyko local time (so that there is some traffic at Haneda
- then I set the time to 08:00 (UTC)? Correct? As there are two times indicated - one being in brackets and showing UTC). Which one is the one I want to use then?
No you use local time but you must be at the airport of departure for it to be correct.
You want 0800 that should be your local time not UTC.
I once asked a friend who now lives in Tokyo about jet lag, and he said
“Flying in from London, you arrive in Tokyo in the morning but your body thinks it’s bedtime.”
If that helps any, so, IDK, work backwards from there and arrive in Tokyo when it’s morning there, maybe.
Google has the flights now landing around 3 pm Tokyo time and departing 7 pm London time and that’s non-stop/direct.
OK! So I load into the airport, deselect real time, choose 08:00 (ignoring what’s written as UTC-Time) and then I wait a bit for the sim to load the traffic et al right?
Sorry, that’s not the issue here: I would like to have some traffic in Japan and I live in Europe. I am 8 hours behind Japan - so I needed to know how to offset this. I know about Jetlag - been there many times - wife is from Japan ^^

Well that’s a different approach you can check when the airport is busy.
But usully airports are the busiest around 4pm to 10pm local times.

If you use AI offline traffic it follows the time you set in the sim, if you use live traffic it does not.
So in your example of flying 19:00 in your time zone, which is 03:00 in Tokyo, but setting the sim local time to 08:00, live traffic would still give you 3 am traffic but AI offline traffic would give you the 8 am traffic you want.
One of several reasons why I never use live traffic.
