Mine’s up and running too using off the shelf components and Mobiflight. I have the spring effect you mentioned, also lateral wind and trim correction. So the pedals will move back and forth with cross winds and gusts. the trim wheel will compensate for cross wind. I’m still working on ground roll but I may have it figures out. The only issue I’m having is the motor whine from the PWM input. I am going to raise the PWM frequency in hopes to eliminate it. Are you using a PWM signal? I may have to figure another off-the-shelf input type. Maybe some sort of DAC to control current in an analog fashion.
