This is exactly the behaviour I observe. I get multiple disconnects during taxi to the active - switches me to offline mode. I take-off and once past 10000ft I re-enable bing map data and its fine again for the remainder of the flight until I’m on the ground at my destination.
I’m also running VR, 1Gig connection and agree it really breaks up the flow of the flight and immersion. Also, when I re-enable bing map data is ‘rebuilds’ the ground in what is very a jarring experience in VR.
Somehow I´m experiencing this issues for the second day now.
Whatever server I choose the issue persists. My Internet connection is good and everything works as is suppose to.

I completely disabled the rolling cache for one flight and didn’t experience the disconnect problem. It might have been a one off, but still, might be worth trying?
(I know deleting the rolling cache has already been suggested, I’m merely reporting my findings.)
I have been experiencing this too - anyone know if this has been bug logged? I’ve had a quick look, but couldn’t see anything. Not sure what section it should go in…

If you are referring to the options available by clicking on your gamer tag in the upper right hand corner of the MSFS 2020 home screen, these only affect multiplayer server you connect to. See:
They mentioned a network layer issue in the latest developer update and are doing another sim update this year which they had previously planned for Jan 2025, fingers crossed it includes a fix
