I must admit I haven’t tried it, but I believe the setting for the heading knob is “Set AP Heading Slot Index” located in Controls Options, Autopilot.
There is a binding for “set heading bug” which is supposed to replicate what happens when you press in the heading knob, but it’s not working at the moment and only resets the heading bug to North.
“Increase heading bug” and “decrease heading bug” can be mapped to buttons or knobs to move the bug around.
Correct. If you want the “Heading Bug Sync” behavior when you press in the knob, you must send an external command to the hardware control using FSUIPC or SimConnect type software like SpadNext/AAO/Mobiflight. I use a Mobiflight script to send that command to my VKB General Aviation Panel Box.

You can also check in MISCELLANEOUS - Cockpit Interfaction - INCREASE/DECRASE and map them to any button you want.
In flight, just move your mouse curson top the cockpit element you want, and enjoy !!!
PS: does someone know how to directly focas focus on some cockpit elements ? That would be even much better
