How do I start and save a flight in the air eg: for practice approach? this would be extremely helpful rather than having to take off, fly a pattern and then approach.

Click anywhere on the world map and set that as your departure point. You’ll start in the air. You cannot at the moment pick the altitude, but it sets a reasonable one.

A better way would be to set the airport as your arrival and leave the departure blank, leaving you on final for the runway you choose.
