Until a keybind is available, best thing we can do is set up custom keyboard instrument views to best show the knobs needed at a given time. I personally use the “hover over the knob and use the mouse scroll wheel” to turn the knob. At least the more important knobs for the autopilot are mappable…I have the ALT, VS, and airspeed knobs mapped to controls on my yoke/throttle quad setup.
