Does anyone know how to bind the throttles on the Logitech X-56 to twin engine aircraft? I can only get 0-50% on left throttle half, both engines locked together, and 51-100% on right throttle half, both engines locked together.

What command have you bound to your axis?
Throttle axis. I searched for engine 1 and engine 2 in the drop down menu then selected inputs for each throttle half.
operating the throttles gives full indication on the indicator lines, however, in the aircraft, it only works as stated. Does not work for each individual engine.
I use THROTTLE 2 AXIS mapped to JOYSTICK L-AXIS Y and THROTTLE 1 AXIS mapped to JOYSTICK L-AXIS X with REVERSE AXIS ticked in my Twin profile for the X-56 and that works well for me.
THROTTLE 1 / 2 Axis. That may be my problem, as mine is mapped to ENGINE 1 / 2.
