I was deciding on a new monitor very recently too (still haven’t bought it) but here is what I can tell you:

1080p in something bigger than 24" looks bad. Even if you don’t have 20/20 sight you will notice blurriness and the pixels everywhere as each pixel will be massive. Large computer monitors need the extra resolution because you tend to sit very close to them. A 32" 1080p like the one you mentioned is indeed a very bad choice.

If you only use FS2020 and a train simulator, stick with 60Hz. You know why higher refresh rates are needed? Because some less demanding games can easily push 100+ frames per second (FPS) and if your monitor is stuck at 60Hz, you will experience screen tearing and latency. There is no modern computer that can push FS2020 to triple-digit FPS. You will be wasting those 75Hz or 144Hz. High refresh rate monitors do look smoother but only if your system can take advantage of them. Most people I know with 144Hz monitors only enjoy fast website scrolling.

My advice and what I plan on doing? Get a 60Hz 4k monitor. You can adjust Windows’ text scaling for when you want to simply use a browser or read something and the nicest thing is that 4k is exactly 4 times as many pixels as a 1080p monitor, so you can still run FS2020 in 1080p and the pixels will scale perfectly. 1440p monitors are a weird middle-child as they will push your GTX1080 a bit beyond its comfort level and if you downscale to 1080p to extract a bit more performance, it’s an imperfect approximation and the games will look really bad/blurry.
A 60Hz 4k monitor, VA or IPS panel (stay away from TN), you can go as big as you want (30"+) and trust me you will be very happy with it.
