My HOTAS works perfectly with all aircraft except B 747-8 when I bank right with joystick the yoke turns left, opposite to the way the plane is flying. This can’t be the way the real world plane operates.

Is it just the animation of the yoke in the cockpit that’s an issue, Or do the entire plane banks in the opposite direction of your joystick as well?

Are you sure that the AP isn’t engaged?
That’s a bug with all MSFS aircraft. If the AP is engaged an you e.g. turn the yoke to the right, the AP counteracts your input and deflects the virtual yoke to the left.
I have shut down and restarted. Now the yoke responds properly. It may have been a glitch in the hardware or software, I’m not sure. Was on final approach and when I tried to correct right the yoke turned left and when I tried to turn back to the left the yoke turned right. LOL I managed to get it down but flying with backward acting controls is quite challenging. I should get a steam achievement for that. LOL Thanks for your reply. It seems to be working again.
Ahh yes, the good ol’ turn it off and on again.
