Your system has changed significantly enough as far as Microsoft is concerned so yes you get the standard SU2 release of 1.4.20.0.
Just go through the normal process to join the SU3 beta. If you are still enrolled in the beta via the Xbox insider hub then leave the beta, give it a little time to register and then re-enroll.
Sadly that doesn’t appear to work. I’ve re reregistered for the SU3 beta and sent my latest dxdiag info. I’ve reinstalled the xbox insider hub, the xbox app and logged out and back in again from my microsoft account.
When I launch the Insider app I get the option to join the Microsoft Flight Sim Beta but it only shows the SU16 beta for MSFS 2020.
As you can see I have 2024 installed and it suggests I need to install 2020 first so I can join the SU16 beta. No other options.
Try this: in the Xbox app, click on your gamertag->support and then click on Gaming Services Repair Tool and then follow the instructions. This has helped me a few times and might clean things up so you can join the SU3 beta.

Restarted PC and Launched the insider program but still only get the option for SU16 beta.

If you:
open the Xbox app
click your Gamertag
click Xbox Insider Program
click Previews
The MS Simulator 2024 Beta should be listed in either the
Available or scroll down to the Joined group.
Is it not there?
Nope I only see one that says Microsoft Flight Simulator Beta, no mention of MSFS 2024.
If I join the one I have and then click on the manage option it just shows the SU16 option.
Think I might be back in SU3 beta
Followed the opt out options from this link to opt out of the Insider Program, navigate to Sign in to your Microsoft account, and at the bottom of the page select “Opt Out” under the Insider Program Opt Out section.
Had to login to my microsoft account and get a one time code sent via email and then initally got a message to say sorry this page is not available as it’s under maintenance.
Tried again and it gave me the survey page with the options I’d already selected filled in, but this time it took me through another few steps to verify my email address and to send the dxdiag.
After that I got an enroll option .
Then the MSFS 2024 option showed up in the Xbox insider hub. Selected that and it said pending for about 2 minutes and then said I was registered.
Rebooted PC as suggested and then went into the MS Store and clicked on updates and downloads and it showed an 8.07GB update for MSFS 2024.
