I am a student pilot using the sim to practice certain aspects of training when I am not flying IRL. Should I use modern or legacy flight for the most realistic experience ?

Never ever use Legacy.
It’s only available to make old FSX flight models somewhat compatible with MSFS.
All MSFS aircraft have been designed with the modern flight model.
Switching to Legacy will cause serious problems in many cases.
