Remember that M.2 is just a specification for internally mounted computer expansion cards and associated connectors. You can have M.2 that uses SATA or PCIE. The PCIE cards will be faster than SATA. In the real world, you will likely see very little difference in M.2 stick or a 2.5" SSD.
