I love From the Earth to the Moon! I even got Andrew Chaikin to sign my DVD jacket for me.
Unfortunately, I don’t think that this would realistically happen. For one thing, orbital mechanics is drastically different than the aerodynamics of flight. Mission control is also vastly different than ATC. The systems in spacecraft versus aircraft are also different. Propulsion is different. Procedures are different. The big overlap I see between a space simulator and MSFS is the modeling of Earth.
You could definitely try Kerbal Space Program, as recommended in the posts above me.
