Hello. I have noticed that in many areas of South America the Bing images have been updated ( Bing Maps - Directions, trip planning, traffic cameras & more). Does anyone know when this will be reflected in the sim ?.

they will periodically refresh imagery. Seeing the immense amount of data being processed (we’re talking petabytes here I believe), they don’t do this too often.
The AI will also have to combine multiple different versions of the satellite data to make sure everything is color-corrected properly (not too many really obvious different colours when moving from 1 photo to the next etc).
I think I once read they will do this 4 times per year (please correct me if I’m wrong), but it also might have changed to regional world updates by now.
In conclusion; I doubt anyone will be able to give you a definite answer of when we’ll see this in the sim.

No. But it could hint at the next world update perhaps 
South America is too big for a single WU though, maybe make several WUs over the next couple of years.
I hope it’s soon. the new images are of better quality and are current
