No towering cumulus / thunderstorms in the Caribbean

Brief description of the issue:

I fly exclusively in the Caribbean with live weather. I’ve noticed that there are no clouds above 5,000 feet or so, ever. The low level clouds look great and are appropriate for the region, but everyone who has ever been to the Caribbean knows that in the afternoon you get tall cumulus buildups (often to 45,000 feet and higher) and often rain or thunderstorms. I have literally never seen a tall cumulus buildup in the Caribbean in 2.5 years of flying with live weather in the sim. What gives?
