Like the title says: After Sim Update 5, every time I open the Options menu (Graphics, Controls, etc.) and then close it, the aircraft immediately starts climbing or descending. It seems like the elevators get reset.
Tried it out with the 172 and several turboprops.
I’m I really the only one affected by this? Can someone try this out and let me know? Best way to do it is grab a single prop and achieve level flight manually, ideally at a higher or lower speed than cruise so your elevators are at an angle. Hit Esc to open the options menu and then close it, the aircraft should “jump” up or down because the elevators suddenly reset.

no i dont use autopilot, i use a hotas sytem.
but i seen this issue mentioned by a few others, so i do guess it might be a bug.
Haven’t seen anyone else mentioning it. If it’s in this same forum and you can paste the link here perhaps the mods can merge them?
I am also experiencing the same bug. As soon as you press ESC and return to flight, the elevator resets down and you can’t fix this. What’s even more annoying is that this happens randomly, even during normal flight. In UPDATE 4 the elevator was reset down, but now it resets up. I’ve also tried swapping out my sticks to fix this, but the bottom line is that it’s only clear that it’s a game issue.

Due to this problem, normal flight cannot proceed. I used to use a VKB GLADIATOR MK2 before, but now I’m using a GLADIATOR K, with a TWCS throttle.

What was certain was that the bug was clearly present even before the update.

Now that you mention it, I think I noticed it before, but I guess it was made worse by changes to elevator/trim behavior in SU5. I believe most people don’t notice either because it’s not often you enter the options menu while flying and if you do, chances are autopilot is on.
