I also had PC shutdowns when SU7 was released. Analysis showed, that although stress tests ran fine, MSFS achieved a GPU hot spot (not core) temperature of about 120C immediately shutting down my system without any log. So my solution was to simply limit my fps to 30 in the gpu software utility for testing. (The threshold after which my shutdowns actually occurred was 70 fps, so any limit below that was no problem. So for those reading this topic, applying a fps limit could be a quick way to potentially fix this problem.
Note that the GPU max. temperatur is GPU model dependent, since it depends on where the manufacturer placed temperature sensors etc. So while my critical hot spot temperature is 120C, your measured core temperature could be e.g. 95C and you may not be fine.
