I currently have 2 monitors a 32 inch 1080 and a 28 inch 1080. I am considering buying a second 32 inch monitor and doing away with my 28 inch one. My thinking is to buy a 1440 monitor however I was wondering if anyone has made the change from 1080 to 1440 and what the difference in performance was.
My current pc is Ryzen 3600x, RTX 20270 and 32GB of ram.
Any help is very much appreciated. 
I did just that and for me it was a game changer. I got a Samsung 1440 with free sync and after a few days of setting up and finding the sweet spot between the monitor settings and the Nvidia control panel settings I can now fly with crisp smooth graphics. Intel i5-9600 and RTX 2060 Super.
A 2070 is plenty for 1440p, in fact it will help your Ryzen 3600 out going to 1440p to lower frame rates a bit and help the CPU keep up! Definitely recommended with your Specs. The improvement in detail is a big bonus.
Iām not well versed in AMD processors, but I use to run an intel I7-10700 64GB RAM and an RTX 2060 Super with a 32 1440 and two 27 1080 and had no issues.
I did find that running at 30 FPS in-game gave a smother overall performance than trying to run at 60 FPS.
And I could run ULTRA at 30 FPS.
I would run with all three monitors. The more the better.
I run a 2060super and i7 10700k on 1440p ultrawide 100 render scale with no issues. Most of my CPU settings are maxed. I leave all of my GPU bound settings to high or some off. FPS varies between 30s to 40s. I flew into ORBX Burbank with the FBW A3NX, Terrain LOD slider is a little bit over 200.AIG traffic on and the sim ran butter smooth.

On my old machine I made the leap last year. Ancient i7 2700k with 16 of Ram and got a 1660 super fitted. This done, I got a Pixio 27 inch 1440 and it was (still is, actually) brilliant. Now, with specs like these, you can do 1440 for surprisingly little cost. I did this upgrade whilst working out a spec for a new machine which I now have. Fantastic upgrade for me and I am confident, for you as well.
