I have read a number of posts and seen videos on this - but to be honest I am still confused. I have the cache set at 150 GB as my drive has 70% free - is that about right? Only sometimes the scenery loads slowly, othertimes quickly. And some posts seem to say use a max of 64GB - so is there a limit or is just how much free space you have?

If your internet is fast, just get rid of the cache.
Ok - not sure what you would say is fast. But here in the UK I have BT and the faster possible speed is around 70 MB per second. Is that fast?
No, not really, and a cache makes sense for you. I would ignore cache if you have fiber. Depending on how you use the sim it can be large or small.
If you always fly the same aircraft in the same region, use something like 32Gb
If you fly different aircraft in different regions, cache has little use and can be smaller.
