I’ve not looked at the newest BS release, but in their other (pre-SU15) releases they tended to set parameters that effectively removed any xwind effect on the ground. Which is valid when the weathervane effect was so exaggerated. But perhaps not the most optimal? There are times in a GA aircraft you should need to position the controls more correctly to avoid adverse behaviour.
When you get deeper into it and start to learn that different control devices also have radically different responses to the flight model parameters, you start to understand why some simmers have such different experiences with the same aircraft - after the FSR500 launched there were a lot of complaints about it being too pitch sensitive, but it turned out that nearly all of those (but not all) were coming from folk with Brunner FFB yokes.
