Because they are following a defined path right in the centre of the taxiway, and have no logic to tell them to do anything other than stop or go.
They are dumb as rocks, and only serve to give atmosphere to otherwise sterile airports. But they won’t stay where they should be. They also have a habit of making a beeline for you, again I think which is by design.
