Just delete ornithopter profile on Control options
This option is disabled.
In my case i ONLY have ornithopter profile on joystick. So i only need to choose another profile when flying diferent plane. Some keyboards are assigned to ornithopter but you can clear all them.
I reported this issue as a bug, if you all wish to contribute : Dune Ornithopther keeps switching bindings back to Microsoft's demo profiles
