Why are the roads (terrain) crooked? In this example - Cairo.
Because the elevation data in that area isn’t accurate enough. It looks as though the mesh (elevation mesh data that everything is placed on top of) is uneven.

How much of the grid data is incorrect?
Do the roads there look like mountain tracks almost?
Are there any plans by the developers to fix this?
It’s not broken, so it’s not really a fix. Some areas have better mesh data available than others. You have to remember that some regions may limit the accuracy of the data thats available, or some governments my not allow the data to be used commercially, or it may ben simply to expensive to buy the high level data for a given area for Microsoft to use it commercially. Over time these things tend to improve as better data becomes available.
