Also happens to me. I figured that the rudder doesn’t go back to center if you use RT or LT. If you press any of those, the rudder just move to the direction and if you want it to go back you need to press to the other direction. It is not about assistance, it is a change of behaviour. I had other controller changes after SU10 too, like the ailerons were now inverted.
This is very annoying since it makes the game UNPLAYABLE to me and many. When Microsoft is going to fix this?
My rudder problem resolved when an update glitch forced me to reinstall the sim, and I haven’t seen any problem with the re-centering rudder whatsoever since then. Now, I’d be very reluctant to suggest to anyone that they try reinstalling, but if I’d been fighting this particularly nasty bug for several months as you have, then I’d start thinking about solutions as drastic as that.

My rudder : saitek rudder pedals
in the parameters, if I want to refine the curve of the rudder, I see that all is well (the small point is correctly my rudder) it is just arrived in the cokpit that the problem appears. Surely an option changed during the update but which one? I removed all assistances and simulation as real

This is one of the few apps that will calibrate Saitek, and it often cures this issue.
I had different measures. I bought X-Plane 11 for my Steamdeck and disconnected my Xbox.
Here to say I had the re-centering rudder issue and was completely fixed by turning off all assistance options (they’re on by default)
I ran into the same issue with Logitech rudder pedals, after running a repair under Steam, rudder resets to centre.
Following many-many cures - none worked.
I then remembered I have Logitech extreme 3D pro conected as well ( used for stick AC )
I removed the rudder axis from it
Problem solved !
I assume that during the Steam repair, all joystick setting were reset to default, causing the conflict between rudder pedals and the twist rudder on the saitek stick
I have just sorted the ‘Rudder centering’ problem on my rig.
I had recently bought the Aeroplane Heaven Spitfire Mk1.
It had a ‘Rudder centering’ issue when the pedals weren’t moving.
The way I sorted it.
Put ‘Left Brake Axis’ on spare quadrand channel.
Put ‘Right Brake Axis’ on the same quadrant channel,
so activating that quadrant chennel applied both brakes.
This is simulating the lever on the joystick.
I found that if there was a minimal amount of brake, the rudder behaved as it should. The aeroplane went round in circles on the field with a stationary applied rudder.

While I’ve been in MSFS Forum jail, I’ve improved my Spitfire set-up.
I got a single turn potentiometer with a stalk on it.
Fixed it onto the yoke Centre Stick extension.
It goes to the Leo Bodnar board inside the Yoke box.
To allieviate the ‘dead rudder’, I introduced a bit of ‘Extremity Dead Zone’ on the configuration of the Axis.
Now the set-up is wonderfull.
