Can do a 360 (scattered clouds preset, 5kts wind):
Much depends on wind force. With this plane at 5kts wind you can hardly do a 360deg turn . At 10 Kts wind it’s impossible to do a complete turn. Tried custom wind settings on FS2020 and on FS2024.Almost same result

If that’s the problem, it’s totally unrealistic behavior then. There’s no way the effect of the wind at those speeds should overcome the forces of a rudder in the water.

Unrealistic behavior ? It’ s very possible. In the case of the Icon we should consider that it’s an ultralight craft that can be very sensitive to wind speed. I personally haven’t flown any seaplane and cannot tell if their behavior in the sim are correct. I doubt it. BTW, I’ve flown the Kodiak 100 seaplane (in the FS2020 and FS2024 ) and I can say that it stands stronger winds than the Icon.
IMO the Icon is very enjoyable for sightseen in places like the Caribbean islands if you set a custom wind quite low ..let’s say 0-2 kts…
