Sensitivity Curve settings

#MSFS 2024.
There are 2 places to adjust the curves first is Hit the hardware settings in the lower right of the settings page. Second is settings…Controls…Flight Control Surfaces. Mouse over the control surface you want to change and then click the cog wheel. These 2 places to adjust curves can have different values. Why are there 2 and which on is actually used?

This brings up 2 more questions. Which setting overrides the other? If the hardware setting is global why then is there an option to apply to all planes in the Flight Control Surfaces? Is there anyone that can shed some light on this issue?

I should have said apply to all planes in the profiles section.

Just looking at this. So if I click into the gear on the throttle axis 1 0-100%, and select hardware, and set the curve it applies it to all planes. Is there a way to set a curve for individual planes?
