I am new to Flight Simulator, so I am not familiar with the x/y/z axis scneme for setting up controllers. In Flight Sim X for Steam, I have not figured out how to use the Controller settings (in Settings > Controller) so that all of my dual-joystick controls work. Does anyone know of good documentation for this, an in particular for this version of Flight Simulator that seems to look very different from the non-Steam versions?

I may be confused here, but if you’re asking about the actual FSX sim and not the newest MSFS (aka FS2020), then you’re in the wrong forum. If you are looking for FSX assistance, my (totally biased) recommendation would be here:

i’m asking about the Controls settings, the ones in the screenshot here. (I will see if I inserted the screenshot correctly so that you can see it. 
You’re definitely on the wrong forum. This entire site is for the latest sim released in late 2020. If you follow my link above, you’ll find a section dedicated to all things FSX.
