Ryzen 7 5800X paired with an RTX 3070 will be fine and a good set up. Just don’t expect to comfortably game at 4K with the 3070, it was designed more as a high end 1440p graphics card.
Your set up will be fine for VR too. You’ll hit the ground running with it anyway I’m sure. Just be prepared for the Quest 2 being a bit of a faff to set up. In a way you’re lucky getting it now though. There’s a ton of useful threads and info here on how to set it up best. Most of us are still on a bit of learning curve with the Quest 2 and the sim.
