And another one of those!

At the moment I´m running an i7 7700k@5ghz with 32 gigs of ram @ 3000 mhz and a 1080ti.
With the upcoming AMD combo possibilities and considering reentry into VR i´m very much tempted to go for a high end system.
HOWEVER,

what IF:

i just upgraded to an i7 9900K and a 3070 which would only set me back like 900 euros…

at the moment i get 28ish fps on 2K/ultra/140 render scaling. what are your thoughts about it?

Spending money is a very personal thing to each individual.
If VR is your goal maybe you should wait until it is released to be able to make a more “informed” decision.
Lots of simmers updated their PCs before the release of 18th of August only to find later that they bought / invested on the wrong gear.
