Can’t tell you where they are for MS Store version but I can tell you where they go for the Steam version (good choice, btw!

Other settings (Including Packages if you’re not using a custom path) are in Users\YOURNAME\AppData\Roaming\Microsoft Flight Simulator.
Don’t know if that’s the same location for the MS Store version anyway.
Lastly there is Users\YOURNAME\AppData\Local\FlightSimulator but not sure that what’s in there is important (mapscache, overrides.json).
