My undervolt curve that raised the entire curve so that 0.987mV hit 1950 under load might have been the culprit for a huge instability in terms of frametimes during gaming for me, more specifically MSFS2020. I experimented with quite a few different voltage curves, and it seems like at least MSFS does not handle undervolting well at the lower voltage points on the curve so I have ended up with a curve that remains stock at the lower parts of the curve and is adjusted from about 1860mhz. Quite steep, but effective clock is 1938mhz at 1950mhz and this curve has massively improved frametimes in MSFS, and more specifically during startup when a lot of things is happening. I use RTSS for fps limiting as well as the framegen mod so a very sensitive setup, but before I adjusted my curve to this, it was a lottery as to where it would be good frametimes when getting to the main menu. Not saying in any way that this is the fix and will work for everyone else, but worth trying if struggling with stutters etc when using frame generation.
